Eliminate gluten from your diet (video)

Stig talks about gluten’s impact on health

Bread is a food that usually contains a lot of gluten, and whose gluten content has increased over time. ‘It’s not food for humans’, says Stig about the bread produced by the food industry.

Gluten is a protein found in the grains of wheat, rye and barley. It has the ability to make bread airy, as gluten acts as a glue that seals the bubbles in the bread. Something that a lot of people do not know is that this property has also been utilised for something completely different from baking bread – gluten has been used as wallpaper paste in the past. In the body, however, gluten has inflammation-causing properties and negative effects on health. 100 µg/ml gluten, for example, has the same inflammation-causing effect as 10 ng/ml of the bacterial poison, endotoxin. Also, the replenishment of beneficial intestinal flora is negatively affected by the consumption of gluten.

Stig recommends excluding foods containing gluten from your diet. This includes most types of bread and cakes, which are often very rich in gluten. At the same time, Stig stresses that we should avoid the ready-made gluten-free bread, which is often baked with potato or corn flour, as it has a high glycaemic index and has been heated to high temperatures (which leads to the synthesis of heating toxins). One alternative is to try baking Stig’s nut and seed bread, which is free from grains and gluten and is gently heated. In addition, there are several grains which are gluten-free, contain a variety of vitamins and minerals, and have a lower calorie content, such as sorghum, millet, quinoa and teff. Oats are also a type of grain that Stig recommends.
